Silo reopens and launches Silo X Wine Bar

On Thursday 20th August, Silo, the world’s first zero-waste restaurant, will launch Silo x Wine Bar in The White Building at CRATE, Hackney Wick.

We’re thrilled to announce that Silo will return to Hackney’s The White Building at CRATE, growing its offering to include a new wine bar, Silo x Wine Bar. This news comes soon after the sad announcement that CUB – a joint venture by Silo chef Douglas McMaster and cocktail wizard, Ryan “Mr Lyan” Chetiyawardana – will not reopen after the lockdown. Luckily for fans of the much-loved CUB, it seems some of its spirit will live on in the newly adapted Silo.

The reconfiguration of Silo will see chef and founder Douglas McMaster work closely with the development team and collaborators to create an all-new zero-waste menu and drinks offering designed to complement the space.

The restaurant will continue to showcase suppliers and products which reflect Douglas’ commitment to zero-waste and closed-loop practices and has been designed to allow him to continue to trade directly with farmers and suppliers who have grown alongside the Silo team since they first opened in Brighton in 2014.

Douglas’ menu starts with small plates and snacks such as the ‘Siloaf’ & aged butterKoji quavers & dip and a Soy egg with lava salt. Also available are more substantial dishes such as their ‘Hot 4 u’ Spring onion pancake; Preserved tomato, fig leaf, cottage cheese; Grilled Cuttlefish kebab with umami dipping sauce; Green pea Naan with roasted tomato dip; Grilled flatbread with smoked aubergine and Silo’s smoked pork bun.

Gut Oggau wines

Wines have been selected that continue the approach of sourcing minimum intervention wines from small, artisanal producers such as Sussex-based wine producer, Ben Walgate of Tillingham Wines and legendary wine masters Gut Oggau from Burgenland, Austria.

To accompany the wine list, CRATE will supply beers showcasing a range of styles that harmonise with the flavours and textures from Douglas’ menu. Also available will be a new cocktail list created by Douglas’ long-time collaborator and friend, Ryan Chetiyawardana, which draws heavily upon spirits sourced from maverick Copenhagen grain-to-bottle distillery Empirical Spirits.  

SiloWine Bar will initially open in the evening from Thursday through Saturday and for lunch Saturday and Sunday. Walk-in spaces will be available, however the best tables will be made available to those who choose to book via the Silo website.

Finally, the new venture will see CRATE and Silo continue their work together to develop a sustainable ecosystem to all areas of The White Building, including workshops, events and plans for a weekend market.

 “I’m delighted to be reopening  Silo this month. Silo wine bar is the perfect way for us to invite back guests and regulars and will help us to segue towards reopening the restaurant towards the end of the year and giving guests the full Silo experience as soon as we can.”
