What is Starward Whisky?

Starward Whisky produce accessible and complex Australian Single Malts. Located just outside of Melbourne, the distillery benefits not only from the famous “four seasons in a day” temperature swings but also the innate craft culture and dynamic F&B scenes the city is known for. The team are proud of the fact that they have everything from barley to bar under one roof and can truly celebrate every part of the process whilst remaining near the heart of Melbourne.

Tasting Notes: Starward Nova

Starward Nova, Sated Online

Out of all the brand’s staple products so far, Starward Nova draws the most from the vibrant and fruit-forward red wine its uncharred maturation barrels once held. The expression has a number of impressive accolades, including Best Australian Whisky Innovator (Icons of Whisky 2019) and Best Craft Distilled Whisky in the world in 2016 (World Spirits Competition), and we can certainly see why.

The Nose

On first nosing, you’d be forgiven for confusing this with a port. A full  bouquet of juicy red cherries, ripe berries and dried tropical fruits come through. Floral notes creep in alongside oak spice and caramel.

The Taste

Tarter fruit than expected on the palate with red apple, red currants and other red berries combining with honey and a strong sweet-spice element. The texture is creamy and prolonged with a touch of tannin from the red wine barrel ageing.

Suggested Serve

Due to its somewhat port-like nature, this could be enjoyed neat with some aged cheese. However, we’d suggest having a play with it in a cocktail where it’s signature fruitiness can sing, perhaps in a Manhattan or a Whisky & Tonic.
